Simple Scones
Light, fluffy scones ready in under 30 minutes. Perfect with jam and clotted cream for an afternoon treat.

Ingredients
For 8 servings
- 350g self-raising flour, plus extra for dusting
- 1 tsp baking powder
- Pinch of salt
- 85g cold unsalted butter, cubed
- 3 tbsp caster sugar
- 175ml milk
- 1 tsp vanilla extract
- 1 egg, beaten (for glazing)
- Jam and clotted cream to serve
Instructions

Preheat oven to 220°C (200°C fan). Line a baking tray with parchment paper.

Mix the flour, baking powder, salt, and sugar in a bowl.

Rub in the cold butter with your fingertips until it looks like fine breadcrumbs.

Add the milk and vanilla, and mix quickly with a knife until it just comes together. Don't overwork it.

Tip onto a floured surface and gently pat out to about 3cm thick. Cut out rounds with a cutter.

Place on the tray, brush the tops with beaten egg.

Bake for 10-12 minutes until risen and golden.

Serve warm with jam and clotted cream. Jam first, obviously.
