Creamy Rice Pudding
Old-fashioned baked rice pudding that's creamy, comforting, and fills the house with the most wonderful smell.

Ingredients
For 4 servings
- 110g pudding rice
- 75g caster sugar
- 850ml whole milk
- 300ml double cream
- 1 tsp vanilla extract
- Knob of butter
- Pinch of nutmeg
- Jam to serve (optional)
Instructions

Preheat oven to 150°C (130°C fan).

Put the rice, sugar, milk, cream, and vanilla into a buttered ovenproof dish. Stir well.

Dot the top with small pieces of butter and grate over the nutmeg.

Bake for 2 hours, stirring once after the first 30 minutes.

The pudding is ready when it's thick and creamy with a golden skin on top.

Serve warm with a spoonful of jam if you like.
