One-Pot Chicken Pasta
A quick and easy midweek dinner the whole family will love. Everything cooks in one pot - less washing up!

Ingredients
For 4 servings
- 2 chicken breasts, diced
- 300g penne pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 400g tin chopped tomatoes
- 500ml chicken stock
- 1 tsp dried oregano
- 1 tsp paprika
- 100g cheddar cheese, grated
- Salt and pepper to taste
- Fresh basil to serve
Instructions

Heat a splash of oil in a large pan over medium-high heat. Season the chicken and cook for 3-4 minutes until golden.

Add the onion and garlic, cook for 2 minutes until softened.

Add the pasta, chopped tomatoes, stock, oregano, and paprika. Stir well.

Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.

Stir in half the cheese, season to taste.

Serve topped with remaining cheese and fresh basil.
