Fluffy Pancakes

Thick, fluffy American-style pancakes that are perfect for a lazy weekend breakfast. Stack them high with your favourite toppings.

Ingredients

For 8 servings

  • 200g self-raising flour
  • 1 tbsp caster sugar
  • 1 large egg
  • 250ml milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • Butter for frying
  • To serve: maple syrup, fresh berries, or Nutella

Instructions

    Mix the flour, sugar, and salt together in a large bowl.

    Make a well in the centre and add the egg, milk, and vanilla. Whisk until you have a smooth, thick batter. A few small lumps are fine.

    Heat a knob of butter in a non-stick frying pan over medium heat.

    Drop large spoonfuls of batter into the pan. Cook for 2-3 minutes until bubbles appear on the surface and the edges look set.

    Flip and cook for another 1-2 minutes until golden brown.

    Keep warm in a low oven while you cook the rest.

    Stack them up and serve with maple syrup, berries, or whatever makes you happy.
