Classic Banana Bread

The ultimate cosy banana bread - perfectly moist, golden, and made with love. Uses overripe bananas for maximum flavour.

Ingredients

For 8 servings

  • 3 large overripe bananas, mashed
  • 100g unsalted butter, melted
  • 150g caster sugar
  • 1 large egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • Pinch of salt
  • 185g plain flour

Instructions

    Preheat oven to 180°C (160°C fan). Grease and line a 2lb loaf tin.

    Mash the bananas in a large bowl until smooth.

    Mix in the melted butter, sugar, beaten egg, and vanilla extract.

    Sprinkle over the bicarbonate of soda and salt, then mix in.

    Gently fold in the flour until just combined - don't overmix!

    Pour into the prepared tin and bake for 50-55 minutes until a skewer comes out clean.

    Leave to cool in the tin for 10 minutes, then turn out onto a wire rack.
